Taco- Topped Potatoes


 If you like tacos and you like potatoes, you should definitely try this recipe. It combines both foods into this great little dish that everyone will absolutely love. These are the ingredients you will need to make this little dish. This recipe makes 4 servings.


Ingredients:

  •  4 red or gold potatoes (leave skin on; wash and pierce with fork)
  • 1/2 pound ground beef
  • 1/2 package taco seasoning mix 
  • 1/2 cup water
  • 1 cup diced tomatoes
  • 1/4 teaspoon salt
  • 2 cups shredded lettuce 
  • 1/2 cup (2 oz.) shredded sharp Cheddar Cheese
  • 1/4 cup finely chopped green onions
  • 1/2 cup sour cream


Directions:

  • Microwave potatoes on HIGH 6 to 7 minutes or until tender
  • Meanwhile, brown ground beef in medium skillet over medium-high heat (be sure to break up the meat really well) Drain fat. Stir in seasoning mix and water; cook for 1 minute and remove from heat.
  • Combine tomatoes and salt in small bowl; mix gently.
  • Split potatoes almost in half and fluff with fork. Fill with equal amounts of beef mixture. Top with tomatoes, lettuce, cheese, green onion, and sour cream.
