Ingredients:
- 4 red or gold potatoes (leave skin on; wash and pierce with fork)
- 1/2 pound ground beef
- 1/2 package taco seasoning mix
- 1/2 cup water
- 1 cup diced tomatoes
- 1/4 teaspoon salt
- 2 cups shredded lettuce
- 1/2 cup (2 oz.) shredded sharp Cheddar Cheese
- 1/4 cup finely chopped green onions
- 1/2 cup sour cream
- Microwave potatoes on HIGH 6 to 7 minutes or until tender
- Meanwhile, brown ground beef in medium skillet over medium-high heat (be sure to break up the meat really well) Drain fat. Stir in seasoning mix and water; cook for 1 minute and remove from heat.
- Combine tomatoes and salt in small bowl; mix gently.
- Split potatoes almost in half and fluff with fork. Fill with equal amounts of beef mixture. Top with tomatoes, lettuce, cheese, green onion, and sour cream.
